Food? That’s Amore

Eating and cooking sustainably not only helps our wallet but also our planet. Living alone, I am an advocate for preparing meals on Sundays and munchin’ on them throughout the week. This helps me to add variety in my diet and reduce my food waste. I’m fully aware that having a vegetarian lifestyle isn’t for everyone, but simply eating less meat can significantly contribute to fewer greenhouse emissions.

How to be ¼ Italian? Pasta Con Broccoli

1 lb. small noodles (Cavatelli, Cavatappi, etc.)

Head of broccoli

12 oz mushrooms

1 stick butter

1 pint ½ and ½ cream

2-inch chunk of Velveeta cheese

¾ cup parmesan cheese

Pinch of garlic

Add Italian sausage or chicken if you’d like

Boil pasta. After ~3 minutes, add broccoli and cook for 10 minutes. In a large skillet, combine butter, garlic, ½ and ½, cheese, mushrooms, parmesan, black pepper. Cook until mushrooms are tender. Combine, and finish your plate to make your Italian ancestors proud. Ciao Bella!
